For five generations, the Valentine family has made maple syrup the way they always have. Long ago, the Valentine Family chose not to use reverse osmosis and let the sap take its time. Today, we remain committed to that slower process. It is what gives our syrup its delicious, rich, maple flavor.

Yes. Our syrup is made from maple sap collected from our Northern New York sugar bush and slowly boiled into pure maple syrup.

We still make maple syrup the traditional way. Instead of using reverse osmosis to speed up the process, we boil our sap from start to finish over a wood-fired arch. It takes longer, but we believe the slow boil creates the rich, full-bodied flavor that makes our syrup special.

About Our Maple Syrup

The Valentine family has been tapping maple trees for five generations. The original shanty began running in the late 1800s. Today, the tradition continues.

Our approximately 6,000 taps produce around 1,000–1,500 gallons of maple syrup each year, keeping our operation intentionally small-batch.
