This is the home of Valentine Maple, where the trees aren’t just a resource; they are a legacy being whispered from one generation to the next.
Five Generations of Stewardship
For five generations, the Valentine family has walked these hills. Today, Tim and Patti serve as the current caretakers of the maple sugar bush, guided by the same ecologically sound tree management practiced by Tim’s ancestors.
Their philosophy is simple: manage this land for the next generation waiting in the wings.
While the rest of the industry has turned to high-tech efficiency, Tim and Patti, guided by the traditional wisdom of Stu and his forefathers, have chosen a different path. At Valentine Maple, you won’t find Reverse Osmosis (RO) machines stripping the sap of its character to save time.
The Art of the Slow Boil
“We sell authenticity,” Tim says, tending the fire. “And you can’t rush that.”
Valentine Maple remains committed to the traditional wood-fired arch. By boiling the sap from start to finish over an open flame without RO intervention, the sugars caramelize deeply and slowly. This "slow boil" method creates a craft syrup with a robust, velvety profile and a rich complexity that bulk commodity syrups simply cannot replicate. With 6,000 taps yielding a precious 1,000 to 1,500 gallons of syrup a year, every drop is a testament to small-batch excellence.
From the Maple Sugar Bush to Your Door
The Valentine story doesn't end at the sugar bush. Recognizing a growing hunger for natural sweeteners and transparent farm-to-table connections, the family has pioneered a unique distribution model.
They don't use faceless logistics companies. Instead, they load their heritage syrup into a travel camper and pop-up stand, taking the spirit of Northern New York on the road.
