About Our Maple Syrup

Is Valentine Maple real maple syrup?

Yes. Our syrup is made from maple sap collected from our Northern New York sugar bush and slowly boiled into pure maple syrup.

What makes Valentine Maple different?

We still make maple syrup the traditional way. Instead of using reverse osmosis to speed up the process, we boil our sap from start to finish over a wood-fired arch. It takes longer, but we believe the slow boil creates the rich, full-bodied flavor that makes our syrup special.

Do you use reverse osmosis (RO)?

No. We’ve chosen to continue making maple syrup without reverse osmosis. Our sap is slowly boiled over a wood-fired arch from start to finish.

Why does the wood-fired process matter?

The longer, slower boil allows the natural sugars in the sap to caramelize gradually, creating a deeper, richer and more complex maple flavor.

How long has Valentine Maple been making syrup?

The Valentine family has been tapping maple trees for five generations. The original shanty began running in the late 1800s. Today, the tradition continues.

Where is Valentine Maple made?

Our maple syrup is produced in Northern New York using sap collected from our 163 acre maple sugar bush.

How much maple syrup do you make?

Our approximately 6,000 taps produce around 1,000–1,500 gallons of maple syrup each year, keeping our operation intentionally small-batch.
